The Mediterranean and salt: an eternal alliance
The abundant sunshine combined with limited rainfall and
considerable winds in the Mediterranean, lead to intensive
evaporation which is essential in the production of salt.
The sunshine it takes to produce one million tons of salt in the
French salinas of Giraud, on the country's Mediterranean, is
equivalent to three million tons of oil.
The harvest period for salt differs across the Mediterranean. To the
north it is limited to spring and summer whereas in the south in
